Learn more about this iconic beverage from Joe Canal’s. What Makes Scotch So Special?Scotch is a whiskey that has been enjoyed for hundreds of years. This spirit is a highly regulated one, with specific standards that distillers need to follow in order for their product to be labeled and marketed as Scotch whisky. First, as the name suggests, the product must be made in a distillery in Scotland. While there were originally more distinct varieties based on different regions, including the Highlands and Speyside, over time, the spirit and its different styles spread to be found throughout Scotland. Additionally, scotch must be made using a mash of malted barley and may include other cereal grains. The only additives permitted are water and caramel color, and fermentation must only include yeast. These strict stipulations help ensure that the allure and taste that have made scotch a classic spirit are honored. The result must be liquor that has been matured for at least three years in an oak cask and with an alcohol by volume (ABV) of at least 40% and no more than 94.8%. In the past, peat fires were used to heat kilns during production, offering tarry, smoky flavoring. Today, some distilleries still use peat fires, but many have switched to alternative fuel sources.
